Region: Long Island Sound, Westport Connecticut

Description: They are  bottom-planted and left for full grow out. Shallow waters, swift currents and sandy bottoms provide the conditions necessary for raising them to be unique in shape and color. Averaging in 3.5 inches in size and a medium depth cup. They are known for very firm meats

Flavor Profile: These are known to be the “gateway” oyster for a lot of oyster enthusiasts. They have a very fresh flavor with mild salinity and slightly sweet and crisp finish.

Pairing: Atlantic Fog or Give Your Hops a Tug

It’s a porter! Or, maybe we could say, not a stout. Our English porter plays up the dark and toasty malts, like an English porter should. So, that flinty dry thing you have grown to expect from a dry Irish stout isn’t there – chocolate and toast are. And a bit of sweetness. This ‘not a stout’ will open you to the realm of old world porter.
